This is probably one of the questions I get asked most frequently.
“What do you eat during the day?”
I keep it pretty simple. The ketogenic diet can be pretty time consuming when it comes to food preparation, so I try to keep that to a minimum.
Breakfast: iced coffee with heavy whipping cream and sugar free Torani vanilla syrup. If I know I have a really busy day coming up and don’t want to have to eat during the day, I’ll reheat two pre-made egg cups as well.
Lunch: some sort of light snacking, usually consisting of deli meats and cheeses. If I’m still hungry I’ll have a couple peanut butter and chocolate fat bombs to hold me over.
Dinner: some type of keto recipe off of Pinterest. Visit this blog post for some of our favorite recipes!
Drinks: for drinks, I mainly stick to iced water. I do enjoy an Aquafina sparkling water every day. If I’m feeling a sweet drink, I make a tea latte with unsweetened iced tea (usually peach flavored), heavy whipping cream, and some Stevia for sweetness.
Desserts: if I’m on my period or craving a sweet treat, Derek and I really enjoy fluff, which is a package of sugar free pudding mix with two cups of heavy whipping cream beat until it’s thick and fluffy. Sugar free items aren’t always the healthiest for you, so we limit fluff to once every other week. We always have the peanut butter and chocolate fat bombs on hand as well.
That’s it! I told you – I keep it simple. This diet can be so time consuming and complicated if you let it be. I don’t have time for it, so I don’t. I rarely make keto substitutes, such as breads, cakes, cookies, etc, but am sure I’ll dabble in that with the holidays coming up.
