If you follow me on Instagram, then you know that Derek and I embarked on a new adventure about five weeks ago. We switched over to the ketogenic diet. If you’ve never heard of it before, there’s lots of info out on the interwebz. YouTube and Pinterest are great resources for lots of information on this diet. To sum it up, the keto diet is high fat, moderate protein, and low carb.
One of the most fun parts has been trying new recipes. We’ve tried a lot, because Derek and I like a varied menu. We’ve really enjoyed keto versions of some of our favorite foods.
Below is a list of recipes that have been our favorites so far.
This has been one of my favorites so far! I have one every morning. Now that fall is around the corner, I’ve omitted the cocoa powder, and have been adding some pumpkin puree and pumpkin pie spice. It is delish and beefs up my breakfasts so that I make it all the way till dinner.
These little babies have been a God send! They help to majorly curb my sweet tooth.
This is one of our favorite dinners! Derek loves it! However, the zucchini releases quite a bit of liquid during cooking and we usually end up with lasagna soup. Still tasty, just soupy. I’ve even tried salting the zucchini and letting it sit, but that didn’t seem to help much. Next time I’m going to try leaving the cheese off, baking it uncovered, and then topping it with cheese the last 10 or so minutes.
This is another dinner that we loved! Next time I make it, I’ll be combining the sauce in a pot so that the cream cheese can fully melt, and then while the sauce is still warm I’ll toss the shredded chicken in it.
This has been my absolute favorite. Derek and I love spaghetti squash as is, and the sauce is divine! We love to have it with broccoli and a salad on the side.
As we continue on this keto journey, we’ll discover plenty more recipes that I would love to share!
